PDO AND PGI: RECOGNISABLE MARKS THAT GUARANTEE QUALITY, FLAVOUR AND SAFETY
The quality marks PDO and PGI differ in the type and intensity of the connection between the product and the geographical area of provenance.
The PDO mark is granted to products whose production areas lie strictly within a limited geographical area whose particular characteristics constitute the defining factor for achieving the properties of the product.
The PGI mark places greater emphasis on production techniques rather than the origin of raw materials. In both cases, compliance with the regulations stipulated by formal production guidelines is rigorous and guaranteed by a monitoring body appointed, specifically authorised and licensed by the Ministry of Agricultural, Food and Forestry Policies, which is in addition to the standard checks for the entire production chain.
Regardless of the statutory applicable regulations, continual efforts throughout the production chain to improve both the quality of raw materials and production processes mean that modern Italian cured meats today display a nutritional profile which has improved on the past and is in line with today's dietary requirements.
