The Istituto Valorizzazione Salumi Italiani (IVSI) has worked since 1985 with the aim of facilitating knowledge of traditional cured meat products and circulating appropriate information regarding nutritional values and the cultural, production and gastronomic aspects of these products.
Within Italy it has supported publications, market research, scientific studies and other initiatives aimed at the press, the medical community and consumers. Overseas, the institute has carried out promotional programmes in France, Belgium, Sweden, Finland, Russia, Brazil, Canada, the United States, South Korea, Japan and Hong Kong.
